Greek Chicken Meatballs
Ingredients
- 2 pounds ground chicken
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground oregano
- 1/2 teaspoon red pepper flakes
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup finely diced red onion
- 4 cloves garlic, finely minced
- 1/2 teaspoon lemon zest
- 1 tablespoon olive oil, for frying
Directions
- Add all of the meatball ingredients to a bowl.
- Mix with your hands until well combined and form into small meatballs.
- Heat a skillet over medium heat and then add a tablespoon of oil.
- Next add the meatballs to the skillet and cook until the meatballs are brown.
For Serving
- Chopped romaine
- Feta
- Cucumber
- Tomato
- White rice
- Tzatziki sauce
Easy Homemade Tzatziki Sauce
- 1 1/2 cups plain whole milk Greek Yogurt
- 1/2 cup grated seedless/English cucumber, gently squeezed in a kitchen cloth to remove water
- 2 cloves fresh garlic, finely minced or pressed
- 1/4 cup fresh chopped dill
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
